Shiro-azuki white adzuki beans

A rare white adzuki bean, the ingredient of the finest white bean paste.

Shiro-azuki are, as the name says, white (pale cream-colored) adzuki beans. They are difficult to grow and yields are small, so they are known as a very rare bean.

Most ordinary white bean paste is made from white kidney beans such as tebo beans, but white bean paste made from shiro-azuki is exceptional, with a true adzuki flavor and an elegant, clean finish. In the world of jo-namagashi it is regarded as the very finest ingredient.

In our Wagashi Travel column, we visit a farmer who grows beans by traditional methods in Rurikei, Kyoto.
